Quinoa Breakfast Bake

Mmmm! Guys, I just made the yummiest, healthiest breakfast casserole! Jon starts his day every day at 5 a.m. which means sometimes he doesn’t have time for breakfast. As you guys know, I love food prepping for the week. A healthy breakfast is always a great way to start the day, and this Quinoa Breakfast Bake is absolutely phenomenal! Also super easy!


Quinoa Breakfast Bake

1 cove minced garlic

1/2 onion (I prefer sweet onions)

1 lb breakfast turkey sausage, ground

3 eggs

5 egg whites

2 cups cooked quinoa

1 Tablespoon rosemary

Salt and pepper to taste

1 green bell pepper, chopped

1/2 tomato, chopped

1 zucchini courgette (small, chopped)

2/3 cup mozzarella cheese

Sliced Green onion

  1. Preheat oven to 400 degrees. In a large skillet greased with olive oil, cook garlic and onion over medium heat for about 3-5 minutes. Add in the turkey sausage and cook until sausage is browned. Stir constantly.
  2. In a large bowl, beat together the eggs and egg whites. Add the quinoa sausage mixture, spices and vegetables and mix well.
  3. Spray a 9×13 pan with cooking spray and pour mixture in. Top with cheese and place in the oven to bake until cheese is melted (about 25 minutes.)

Mmmm! Enjoy this yummy recipe, I will just be over here pigging out on quinoa, egg, and cheesy vegetable goodness!
