Pumpkin Chocolate Chip Bread

I absolutely LOVE Autumn. I know that sounds totally basic, but I love it. I love all the gorgeous colors, all the leaves on the ground, and of course, pumpkin everything. Pumpkin bread, pumpkin cake, pumpkin bars, pumpkin smoothies. Autumn is the time of year when we get to celebrate the amazingness that is pumpkin! And pumpkin is actually pretty awesome. Not only does it taste delicious in just about everything, it also is a great source of vitamin B6, Iron, Magnesium, vitamin A, vitamin C, and potassium.

One of my favorite all time pumpkin goodies, is pumpkin chocolate chip bread. I have found that it is actually super hard to find a decent pumpkin bread recipe. However, I found one from my Grandma that is absolutely amazing! So amazing in fact, that recently I accidentally made too much. And by too much, I mean I multiplied it by six. I made eight loaves of pumpkin chocolate chip bread!!


It all started with mom brain. I absolutely swear, that it was mom brain. There really is no other explanation for how I could have done this. I had originally wanted to make three loaves of bread. The recipe calls for one cup of pumpkin. I, and my mom brain, thought that one can was one cup. Looking back I don’t even know why I wasn’t thinking in the moments before I dumped three cans of pumpkin into the bowl. I started to follow the recipe, and realized that something was not right. It looked too gooey. It wasn’t thickening up like it was supposed to either, so I took a closer look at the recipe, and one of the empty pumpkin cans. For those of you who don’t know, which I would assume is very few, one can of pumpkin is about sixteen ounces, or two cups.20161025_161034

When I realized what I had done, I began to multiply all of the needed ingredients by six. Twelve cups of flour later, I had two giant mixing bowls of pumpkin bread batter, and only two large bread pans. So I pulled out my small loaf pans as well. By the time I was done baking I had a sink full of dishes, four large loaves of bread, and four small ones. Those loaves of bread were so dang good though! Super moist, and flavorful. The recipe, when one is actually paying attention, is actually pretty simple: (Note: I usually double this to make two loaves of bread)

2 cups sifted flour

2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon cloves

1 CUP of pureed pumpkin

1 cup Sugar

1/2 cup whole milk

2 eggs

1/4 cup softened butter

1 cup milk chocolate chips

Preheat your oven to 350 degrees, and combine pumpkin, sugar, eggs, butter, and milk. Mix well, then add powder, soda, salt, cinnamon, nutmeg, cloves, and chocolate chips. Add Flour one cup at a time, and mix well. Batter will be thick. Spread the batter in a well greased bread pan,  and bake for about 55 minutes, or until toothpick inserted into the center comes out clean. Happy Baking!
